The perfect scone recipe for National Cream Tea Day

In celebration of National Cream Team Day (shouldn't this be a public holiday here in Cornwall??) we've decided to share our favourite scone recipe! 

There's no such thing as too many scones, and they're super easy to make, so let's get cracking!



(Makes around 10 scones)

  • 50g of butter
  • 230g of self-raising flour
  • 1 level tsp of baking powder
  • 30g of caster sugar
  • 1 large egg
  • milk


Scones are super easy to make, so if you've never made them before, don't panic! 

Preheat your oven to 220 degrees/fan 200 degrees/Gas 7.

First, you're going to want to put your flour, baking powder and butter in a bowl and use your fingertips to rub them together, until the mixture looks like dainty breadcrumbs.

When you've got something resembling fine breadcrumbs, stir in the sugar. 

Crack an egg into a measuring jug and lightly beat it. Next, pour in some milk until you're at 125ml and stir together. 

Pour most of the egg/milk mixture into your flour, butter and sugar and mix together. Leave a tablespoons worth of the liquid aside for glazing the tops later. 

Pop your dough onto a floured surface and lightly knead for about one minute, or until well combined. Be careful not to be too hard, or over mix the dough. 

Using a rolling pin, roll out your dough so it's about half an inch thick and cut out circles to place on a floured baking tray.

Lightly glaze your scones with the milk/egg mixture using a pastry brush or a teaspoon.

Place your scones in the oven and cook for 10 minutes or until lightly golden.

Lastly, (and this is the best step!) enjoy with lashings of jam (first!) and Cornish clotted cream!
